TRAY FRUIT CAKE

Ingredients:-

• 275gms. Ormo Self Raising
• 450gms. Mixed Dried Fruit
• 150gms. Soft Brown Sugar
• 150gms. Butter
• 2 Teaspoons Ground Mixed Spice
• 1 Teaspoon Salt
• 2 Large Eggs
• 4 Tablespoons of Milk

Sift the flour, spice and salt together. Rub in the butter and stir in the sugar.
Beat the eggs and add along with the milk plus stir in the dried fruit. Mix well.
Put into a greased 18cms. by 28cms. and bake in a moderate oven (180°C Gas mark 4) for one hour.
Cool in the tin and cut as desired.
